      Equipment:

      • Large soup pot or Dutch oven
      • Wooden spoon
      • Cutting board and knife
      • Ladle

      Ingredients:

      • 1 lb ground beef
      • 1 medium onion, diced
      • 2 carrots, peeled and sliced
      • 2 celery stalks, chopped
      • 2 garlic cloves, minced
      • 4 cups beef broth
      • 1 can (14 oz) diced tomatoes
      • 1 can (6 oz) tomato paste
      • 2 medium potatoes, peeled and diced
      • 1 cup frozen green beans or peas
      • 1 teaspoon dried oregano
      • 1 teaspoon dried basil
      • 1/2 teaspoon smoked paprika (optional)
      • Salt and pepper, to taste

      Instructions:

      1. Cook the Beef:
        • Heat a large soup pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
      2. Sauté Vegetables:
        • Add the onion, carrots, celery, and garlic to the pot. Cook for 5 minutes until softened and fragrant.
      3. Build the Base:
        • Stir in the tomato paste and cook for 1-2 minutes. Add the diced tomatoes, beef broth, oregano, basil, smoked paprika (if using), salt, and pepper. Bring to a boil.
      4. Add Potatoes and Simmer:
        • Stir in the diced potatoes. Reduce the heat to low, cover, and simmer for 20 minutes or until the potatoes are tender.
      5. Add Frozen Vegetables:
        • Stir in the green beans or peas and cook for another 5 minutes until heated through.
      6. Serve:
        • Taste and adjust seasonings as needed. Ladle the soup into bowls and serve hot.

      Presentation Ideas:

      • Garnish with chopped fresh parsley or a sprinkle of grated Parmesan cheese.
      • Serve with crusty bread or a side of buttery crackers.

      Tips:

      • Swap ground beef with ground turkey or chicken for a lighter version.
      • Add other vegetables like corn, zucchini, or bell peppers for extra nutrition.
      • This soup freezes well—perfect for meal prepping!
