      • 1/2 cup powdered sugar

      For the Chocolate Drizzle:

      • 1/2 cup semi-sweet chocolate chips
      • 1 teaspoon coconut oil or vegetable oil

      Instructions

      1. Prepare the Brownie Cookie Dough:
      In a small saucepan or microwave-safe bowl, melt the chocolate chips and butter together until smooth. Set aside to cool slightly.

      In a mixing bowl, beat the eggs and sugar until light and fluffy. Mix in the vanilla extract, followed by the melted chocolate mixture.

      In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Chill the dough in the refrigerator for 30 minutes.

      2. Bake the Cookies:
      Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, spacing them about 2 inches apart. Bake for 8-10 minutes, or until the edges are set but the centers remain soft. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.

      3. Make the Peanut Butter Filling:
      In a small bowl, mix together the peanut butter and powdered sugar until smooth. Roll teaspoon-sized portions into balls and flatten slightly.

      4. Assemble the Cookies:
      Once the cookies are cool, place a peanut butter disk on top of each one, pressing gently to adhere.

      5. Add the Chocolate Drizzle:
      Melt the chocolate chips and coconut oil together in a saucepan or microwave-safe bowl until smooth. Drizzle the melted chocolate over the cookies. Let the chocolate set before serving.
