      Ingredients

      • 3 1/2 cups gluten-free all-purpose flour (with xanthan gum included)
      • 1/4 cup granulated sugar
      • 1 packet (2 1/4 tsp) instant yeast
      • 1/2 tsp salt
      • 1/2 cup milk (warm, around 110°F)
      • 1/4 cup unsalted butter (melted)
      • 2 large eggs (room temperature)
      • 1/2 cup plain Greek yogurt or sour cream

      For the Filling:

      • 1/2 cup brown sugar
      • 1 1/2 tbsp ground cinnamon
      • 1/4 cup unsalted butter (softened)

      For the Icing:

      • 1 cup powdered sugar
      • 2 tbsp milk (adjust as needed)

      4. Knead the dough in the stand mixer or by hand until smooth (about 5-6 minutes).
      Step 2: Roll Out the Dough
      1. Lightly flour a clean surface and roll out the dough into a 12×16-inch rectangle.
      Step 3: Add the Cinnamon Filling
      1. Spread the softened butter over the rolled-out dough.
      2. Mix together the brown sugar and cinnamon, then sprinkle it evenly over the buttered dough.
      3. Gently roll up the dough from the longer side, creating a log. Cut into 12 even rolls.
      Step 4: Let the Rolls Rise
      1. Arrange the rolls in a greased 9×13-inch baking dish. Cover with a clean towel and let them rise for 30-45 minutes until puffed up.
      Step 5: Bake the Rolls
      1. Preheat your oven to 350°F (175°C).
      2. Bake for 20-25 minutes or until golden and cooked through.
      Step 6: Prepare the Icing
      1. In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.
