      Ingredients

      For the Donut Dough:

      • 3 1/2 cups (440g) all-purpose flour
      • 1/4 cup (50g) granulated sugar
      • 2 1/4 teaspoons (1 packet) active dry yeast
      • 1/2 teaspoon salt
      • 3/4 cup (180ml) warm milk (110°F/43°C)
      • 1/4 cup (60g) unsalted butter, melted
      • 2 large eggs
      • Vegetable oil, for frying

      For the Cheesecake Filling:

      • 8 ounces (225g) cream cheese, softened
      • 1/2 cup (100g) powdered sugar
      • 1 teaspoon vanilla extract
      • 1/4 cup (60ml) heavy cream

      For the Strawberry Glaze:

      • 1 cup (125g) powdered sugar
      • 2 tablespoons strawberry puree
      • 1 tablespoon milk (as needed for consistency)

      For Garnish:

      • Fresh strawberry slices or sprinkles (optional)

      Equipment

      • Large mixing bowls
      • Stand mixer with dough hook (optional)
      • Rolling pin
      • Biscuit cutter or round cookie cutter
      • Deep fryer or heavy-bottomed pot
      • Piping bag with round tip

       

      Instructions

      Step 1: Make the Donut Dough

      1. In a large bowl, combine the warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.
      2. Add the melted butter, eggs, and salt to the yeast mixture. Stir to combine.
      3. Gradually add the flour, mixing until a soft dough forms. Knead the dough by hand or with a stand mixer for 8–10 minutes, until smooth and elastic.
      4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place for 1–2 hours, or until doubled in size.

      Step 2: Shape and Fry the Donuts

      1. Roll the risen dough to about 1/2-inch thickness on a floured surface. Use a biscuit cutter to cut out circles.
      2. Place the donuts on a parchment-lined tray, cover lightly, and let rise for 30 minutes.
      3. Heat vegetable oil to 350°F (175°C) in a deep fryer or heavy-bottomed pot. Fry the donuts in batches, 1–2 minutes per side, until golden brown.
      4. Transfer to a paper towel-lined tray to cool.

      Step 3: Prepare the Cheesecake Filling

      1. Beat the cream cheese and powdered sugar in a bowl until smooth.
      2. Add the vanilla extract and heavy cream, beating until light and fluffy. Transfer the filling to a piping bag with a round tip.

      Step 4: Fill and Glaze the Donuts

      1. Use a skewer or knife to make a small hole in the side of each donut. Pipe the cheesecake filling into each donut until full.
      2. In a bowl, whisk together the powdered sugar and strawberry puree to make the glaze. Add milk, one teaspoon at a time, if the glaze is too thick.
      3. Dip the tops of the donuts into the strawberry glaze and garnish with fresh strawberry slices or sprinkles, if desired.

      Tips

      • For a shortcut, use store-bought jam in place of the strawberry glaze.
      • Keep the oil temperature consistent to ensure evenly cooked donuts.
