Chicken Skewers Grilled Recipe
Fire up the grill for these juicy and flavorful chicken skewers! Marinated to perfection, these skewers are a crowd-pleaser for any barbecue or family dinner.

Ingredients
- For the skewers:
- 1.5 lbs boneless skinless chicken breast or thighs, cut into 1-inch cubes
- 2 bell peppers cut into 1-inch pieces
- 1 red onion cut into 1-inch pieces
- 1 zucchini sliced into thick rounds
- Wooden or metal skewers soaked in water if wooden
- For the marinade:
- 1/4 cup olive oil
- 3 tbsp soy sauce
- 2 tbsp lemon juice
- 2 cloves garlic minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Prepare the marinade:
- In a large mixing bowl, whisk together olive oil, soy sauce, lemon juice, garlic, paprika, oregano, salt, and pepper.
- Marinate the chicken:
- Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
- Preheat the grill:
- Heat your grill or grill pan to medium-high heat (about 375°F/190°C).
- Assemble the skewers:
- Thread the marinated chicken onto skewers, alternating with pieces of bell pepper, onion, and zucchini.
- Grill the skewers:
- Place the skewers on the preheated grill. Cook for 5–7 minutes per side, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred. The chicken should reach an internal temperature of 165°F (74°C).
- Baste and finish:
- Brush the skewers with any remaining marinade during the last few minutes of grilling for extra flavor.
- Serve:
- Remove the skewers from the grill and let them rest for a couple of minutes before serving. Serve hot with your favorite dipping sauce or side dishes.
