Blackberry Cobbler is a timeless dessert that celebrates the natural sweetness and tartness of blackberries. A layer of bubbling, juicy fruit is topped with a tender, buttery crust, making every bite irresistible. Whether you’re using fresh-picked blackberries in summer or frozen berries in winter, this recipe is a year-round favorite. Pair it with a scoop of vanilla ice cream for the ultimate treat.

      Equipment:

      • Mixing bowls
      • Whisk
      • Measuring cups and spoons
      • Baking dish (9×9-inch or similar size)
      • Spatula or spoon

      Ingredients:

      For the Filling:

      • 4 cups fresh or frozen blackberries
      • 1/2 cup granulated sugar
      • 1 tablespoon cornstarch
      • 1 teaspoon lemon juice
      • 1 teaspoon vanilla extract

      For the Topping:

      • 1 cup all-purpose flour
      • 1/2 cup granulated sugar
      • 1 teaspoon baking powder
      • 1/4 teaspoon salt
      • 1/2 cup milk
      • 4 tablespoons unsalted butter, melted

      Instructions:

      1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish lightly with butter or cooking spray.
      2. Prepare the Blackberry Filling:
In a large mixing bowl, combine blackberries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until the blackberries are well-coated. Pour the mixture into the prepared baking dish, spreading it out evenly.
      3. Make the Topping:
In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until a smooth batter forms.
      4. Assemble the Cobbler:
Spoon the batter evenly over the blackberry mixture. It doesn’t need to cover the blackberries completely; the topping will spread as it bakes.
      5. Bake:
Place the dish in the preheated oven and bake for 35–40 minutes, or until the topping is golden brown and the blackberry filling is bubbling.
      6. Cool and Serve:
Allow the cobbler to cool for about 10 minutes. Serve warm, topped with vanilla ice cream or whipped cream, if desired.

      Tips:

      • For a sweeter cobbler, add an extra tablespoon of sugar to the filling.
      • Experiment with other fruits like raspberries or blueberries, or mix them with the blackberries for a unique twist.
      • If using frozen blackberries, let them thaw slightly and drain excess liquid before mixing with the sugar and cornstarch.

This Blackberry Cobbler is a simple yet decadent dessert that’s sure to impress. With its juicy fruit filling and golden crust, it’s the perfect end to any meal. Enjoy the comforting flavors of this classic dessert, and don’t forget the ice cream!
